Living With Betty Crocker Gluten Free Cake Mix


Look how moist the cupcake turned out!

This is me getting every last crumb off the cupcake paper!

Yay for Betty Crocker! They have just come out with four Gluten Free mixes:

Betty Crocker® Gluten Free Yellow Cake Mix
Betty Crocker® Gluten Free Devil’s Food Cake Mix
Betty Crocker® Gluten Free Brownie Mix
Betty Crocker® Gluten Free Chocolate Chip Cookie Mix

My first thought was that the big players in the cooking world were trying to get in on the gluten-free fad. I can't help it, I'm a skeptic. However, I was impressed to read the following story on the side of the box (and on their web site):

Also, according to their web site they are donating money to Celiac Disease Foundation and the Celiac Sprue Association.
So, then I needed to see if it really tasted good!! I found the mixes at Kroger for about $5 a box. I chose the yellow cake mix and thought I'd just make some cupcakes so I could eat a few and freeze the rest. I substituted the butter with Earth Balance shortening. It also called for 3 eggs which I substituted with applesauce and GF baking powder. I made two plain ones, then I dunked goodies in the rest including chocolate chips (Enjoy Life!'s GF and dairy free), strawberries, blueberries and blackberries. I ate three. They were awesome!
If you have ever eaten any gluten free breads, then you know how dry and crumbly most GF breads are. Not so with these cupcakes!
